Recipe | Strawberry Fat Bombs

Okay, I know I said I wasn’t the type to do a pink/red themed food post for today, but I can explain. I was at Target buying stuff for the millionth baby I know who was born/is going to be born this year (seriously guys, so many babies) and I came across the freeze dried fruit section. A lightbulb went off. I make some version of these balls all the time. But what if I added FREEZE DRIED BERRIES to them?!

So the berries just happen to be red… and it just so happens to be Valentine’s Day… but dang, I’m not lying when I say these are life changing! So maybe I might have made a V-Day recipe, oh well, worse things have happened ammirite?!

Strawberry Fat Bombs

For the ballzzzzz:

  • 1 c shredded coconut
  • 1 tbsp coconut butter
  • 1 tbsp coconut oil
  • 1/2 c cashews
  • 1/2 c pistachios
  • 1/4 c walnuts
  • 1/4 c almonds
  • 6 dates, pitted
  • 1/2 c freeze dried strawberries
  • 1/2 c freeze dried raspberries

Blend baby, blend! You want a dough-y consistency, but don’t blend it to an absolute pulp, or you’ll have pink nut butter. Which might not be bad but it’s not what we’re going for. A sticky, slightly gritty texture is ideal. Mm, aren’t I making these sound so good?

Next, roll them into balls. You should get between 9-12 depending on how big you make them.

Then you’ll want to blend up another 1/2 c of freeze dried strawberries with another 1/2 c of freeze dried raspberries. Just a few pulses should turn them into dust. Put said dust in a bowl and roll the balls in it until they are coated.

Place in a glass dish and freeze for at least 30 minutes to harden.

You can store them in the freezer and take them about approximately 5 minutes before eating, or in the fridge where they will still remain nice and solid and you won’t ever have to wait to eat them (disclaimer: this might be dangerous)


Look how pretty!! And my god are they delicious. Way more so than I was expecting.


How does everyone else feel about V-Day? Indifferent? Love it? Just here for the snacks?

I’m obviously pretty meh about it, and I’m not one to indulge in unhealthy things just because it’s a holiday. I always feel gross when I do that. That doesn’t mean I don’t have treats, I just make stuff I know won’t make me feel like garbage and don’t overdo it.

Fortunately, we have no plans at all tonight, so we’ll probably end up watching X-Files with our cats like any other night and I’m so good with that!
