Recipe | Smashed Garlic Purple Potatoes

Okay, sometime soon I’m going to create a recipe that isn’t some kind of potato dish… but today is not that day. I love potatoes. Every type, every way they can be prepared (unless you fry them in canola oil or some shit, for real, when are we gonna move past that junk?)

I’m also a sucker for pretty colored produce. Any time I see a different colored variation on a vegetable, I snatch it up! Purple and orange cauliflower? Yes please! Purple beans? Maybe I just like purple produce… it’s just so beautiful!

I don’t really have much else to say on the purple front, so I guess we can get on with the recipe now…

  • Small purple potatoes (NOT purple sweet potatoes… this is important)
  • 4 cloves diced garlic
  • 2 tbsp ghee


  • Preheat oven to 400
  • Boil potatoes in a large pot until you can easily stick a fork through them
  • Remove from water and let them cool slightly
  • Place them on a lined baking sheet and smash each potato with a fork until they lay slightly flat like a cookie
  • Melt the ghee and mix in the diced garlic
  • Using a pastry brush, coat each potato with the garlic ghee
  • Roast in the oven for an additional 30 minutes or until they reach your desired crispiness
